My first encounter with this stew was unforgettable. After one of Mickey’s high school football games, where friends and rivals alike gathered, I was invited to his home for dinner. His grandmother always prepared something delicious, but I particularly loved her Italian Wedding Soup and this Slow Cooker Tuscan Beef Stew.
Slow Cooker Tuscan Beef Stew Recipe
This recipe is not just satisfying; it’s a dish you’ll find yourself making repeatedly. The combination of flavors is incredibly inviting, making it an all-time comfort food.

The components for this beef stew are straightforward to procure, and feel free to customize by adding extra vegetables, pasta, or beans according to your preference.
- 1 Can Hunt’s Petite Diced Tomatoes
- 3 carrots, chopped into bite-sized pieces
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic (from a jar)
- 2 pounds stew meat (I prefer beef tips, but chuck roast is also ideal), browned in a skillet
- 1 Can Tomato Soup
- 1 Can Beef Broth
- 1/2 cup of water
- 2 cans white kidney beans, rinsed & drained (to be added later)
- Optional: Ditalini or bow-tie noodles (for a more filling dish)
- Optional: shredded parmesan cheese.
- Optional: One bay leaf, added during the cooking process.
Directions for Making Tuscan-Style Crockpot Beef Stew
Begin by browning the meat. I simply heat the beef in a skillet over medium-high. Once the meat is fully browned, transfer it to the slow cooker—don’t forget those flavorful browned bits from the pan.
Pro Tip: Mickey prefers to enhance the browning with a splash of olive oil, red wine, and Worcestershire sauce for added depth of flavor. A sprinkle of salt and pepper beforehand doesn’t hurt either.
Next, prep your carrots by peeling and chopping them. Add the carrots along with the remaining ingredients (except noodles and beans) into the slow cooker: incorporate the tomatoes, Italian seasoning, garlic, tomato soup, beef broth, and water.
Now, allow the stew to cook for 5 hours on high or 7-8 hours on low. As it simmers, you’ll see a luscious beef broth developing. If you’ve opted for noodles, now’s the time to prepare them separately; cook until al dente, then set aside.
Once the stew is done, incorporate the beans and noodles. Let it simmer for another 20 to 30 minutes for those flavors to meld.
Optional: Top with parmesan cheese and fresh parsley before serving.
Please note: Some people ask if this can be made in an Instant Pot. Though I haven't attempted it, I suspect it would work quite well. The flexibility of this recipe means it can easily adapt!
